Cosmic Rice Krispie Treats

Rice Krispies. Sticky, cloyingly sweet, and super nostalgic. I wanted to take the magic of my childhood Rice Krispie treats but elevate them to make them more “adult friendly.” This recipe takes a classic treat to the next level by browning the butter to bring forward beautiful toasted and nutty flavors, and adding a layer of bittersweet chocolate to help cut through the sweetness of the marshmallows. Follow along for a fun and easy treat that is sure to transport you back in time.

Ingredients

  • 4 Tbsp. Unsalted Butter (1/2 stick)

  • 10 oz Jet Puffed Marshmallows

  • 6 oz Rice Krispie Cereal*

* For delicious variations, you can swap out the Rice Krispies for Cocoa Krispies or Fruity Pebbles!

Topping

Feel free to be creative with the toppings- stick to classic and skip the topping, swirl in peanut butter chips, add some salted caramel or a delicious frosting!

  • 6 oz Bittersweet Chocolate (bar or chocolate chips)

  • 2 oz White Chocolate Chips (optional)

  • Nonpareils or Sprinkles

Method

  1. Line a rimmed baking sheet or glass baking dish with parchment and spray with cooking spray.

  2. Pour the Rice Krispies into a medium size bowl and set aside.

  3. In a medium sauce pan, melt the butter on medium heat. Once it’s melted, continue to stir to brown the butter (it should take around 3-5 minutes). As it starts to brown, the top will appear very foamy/frothy. Keep a close eye. It is ready as soon as the milk solids become an amber brown color.

  4. Once the butter has browned, add the marshmallows and continue to stir until the marshmallows have melted and melded into the butter. Then, remove from the heat.

  5. Pour the marshmallow mixture into the Rice Krispies and stir to combine.

  6. Working quickly, pour the Krispies into the prepared pan and flatten using an offset spatula. Let cool.

  7. Once cooled, melt the bittersweet chocolate over a double-boiler or in the microwave in short bursts stirring in-between.

  8. Pour the melted chocolate over the Rice Krispies and spread out using an offset spatula until smooth and the top is covered.

  9. Optional- drizzle melted white chocolate over the top and top with sprinkles, nonpareils, edible stars or other fun toppings!

  10. Cut into squares and enjoy!
