Crunchy Baked Potato Latkes with Bare Snacks Apple Chips
For me, the best part of Hanukkah is celebrating around the table with family and friends. Potato latkes are of course an important part of the Hanukkah tradition. This year, I decided to tackle baked latkes, a healthier alternative that is just as delicious and fun to make! The best part of this recipe is that you can easily add spices, swap out the Russet potatoes for sweet potatoes (or do 50/50) and change up the toppings- anything from pastrami to lox and caviar or the classic sour cream + apple sauce will do. I added my favorite baked apple chips to give these latkes an extra crunch. Enjoy!
Ingredients
2 Medium Russett Potatoes (or 3-4 Small)
1/2 Sweet Onion
1/2 Apple
1/4 Cup Matzo Meal
2 eggs, scrambled
1 teaspoon of baking powder
1/2 Tbsp Kosher Salt
Pinch of Paprika
1/2 tsp Cinnamon (optional)
⅛ tsp cracked black pepper
Drop of olive oil
For Serving
Sour Cream
Apple Sauce
Chopped Chives
Bare Snacks Cinnamon Apple Chips
Method
Preheat your oven to 425°F and prepare a baking sheet with a silicone mat or parchment paper
Using the largest setting on your box grater, grate the potatoes, onion and apple
Once grated, use a kitchen towel or cheesecloth to squeeze all of the liquid from the mixture
Place the potatoes, onion and apple in a medium size bowl and stir in the matzo meal, eggs, baking powder, kosher salt, paprika, cinnamon and pepper
Once combined, use either a large scoop or your hands to shape the latkes into pucks and place on the baking sheet
Spray or drizzle a little bit of olive oil onto the top of each latke. Place in the oven and bake for 15 minutes
After 15 minutes, flip each latke over and spritz each latke with olive oil before placing back into the oven for another 10-15 minutes
Top with sour cream, apple sauce, chopped chives and for an added sweet crunch crumble Bare Snacks Cinnamon Apple chips on top!
