Baked Pulled BBQ Chicken Sliders

Need to come up with a delicious dinner in a pinch? These sliders taste like you’ve been working on them all day but can be whipped up in under an hour!

Note that you can prepare the pickled onions and broccoli slaw a day in advance!

Yields 4 BBQ Chicken Sliders or 8 mini sliders

Ingredients

Pickled Onions

  • 1 small red onion (or 1/2 of a large red onion), thinly sliced

  • 1/4 cup of rice wine vinegar

  • 1/2 cup of apple cider vinegar

  • 1/2 tsp. sugar

  • 1/2 tsp kosher salt

  • 1 clove of garlic, peeled and cut in half

  • A bunch of peppercorns

  • Pinch of dill

BBQ Chicken

  • 1 LB boneless skinless chicken breast

  • 1 bottle of your favorite BBQ sauce (I love Sweet Baby Ray’s and Bone Suckin' Sauce)

  • Salt and pepper to taste

Broccoli Slaw

  • 1 cup of shredded broccoli (or broccoli slaw)

  • 2 TBSP mayonnaise

  • 1 TBSP apple cider vinegar

  • 1 tsp of kosher salt

  • Pepper to taste

For Serving

  • 4 brioche buns or 8 mini brioche buns

  • Pickles, sliced

Method

Pickled Onions

  1. Place the sliced onions in a colander in the sink and cover with boiling water

  2. In a glass bowl or jar, mix together the sugar, salt, peppercorns, garlic, and dill

  3. Pour the vinegars into the jar and mix until the sugar and salt have dissolved

  4. Add the onions to the bowl and stir to combine

  5. Cover and place in the fridge for an hour

BBQ Chicken

  1. Preheat oven to 400 degrees F

  2. Place the chicken breast in a casserole dish or glass dish and season with kosher salt and pepper

  3. Cover with BBQ sauce, then flip and cover the other side

  4. Place in the oven for 16 minutes

  5. After 16 minutes, remove from oven and baste with more BBQ sauce

  6. Place back into oven for another 16 minutes

  7. Remove from the oven and let it cool for 10+ minutes

  8. Once the chicken has cooled a bit, place in a bowl and shred using two forks or a whisk

  9. Mix in additional BBQ sauce to taste

Broccoli Slaw

  1. Place shredded broccoli in a bowl

  2. Add in the mayonnaise, vinegar, salt and pepper and mix to combine

Assemble

  1. Lightly toast the brioche bun

  2. Spread a layer of BBQ sauce onto the top bun

  3. Scoop pulled chicken onto bottom bun

  4. Top with broccoli slaw, then pickled onions and sliced pickles

  5. Serve and enjoy!
