Recipe Hack: 5 Minute Rao’s Tomato Soup

Sound familiar? There are flurries in the air and it’s lunchtime. You’re craving the ultimate tomato soup- but don’t have any in the pantry. One of my favorite recipe hacks is this delicious tomato soup made with a pantry staple- Rao’s tomato basil (or marinara) sauce! This recipe can be thrown together in 5 minutes and is the perfect pairing for a delicious grilled cheese!

Ingredients

  • 3/4 cup Rao’s Tomato Basil or Marinara Sauce

  • 3/4 cup Chicken Stock (or vegetable stock)

  • 1/4 cup milk or non-dairy milk

  • 1/4 fresh basil, torn

  • Fresh cracked black pepper, to taste

  • Pinch shredded sharp cheddar cheese (optional)

  • 1/4 cup croutons (optional)

Method

  1. In a medium sauce pan, mix together the Rao’s sauce and chicken stock and bring to a boil over medium-high heat

  2. Reduce to low and allow to simmer for ~ 5 minutes

  3. Mix in milk (or non-dairy alternative) and stir in torn basil leaves

  4. Top with basil, croutons, shredded cheese, and fresh cracked black pepper

  5. Serve with grilled cheese and enjoy!
