Game Day Baltimore Crab Nachos with Wild Fork Foods

I am all about game day. Partly because I enjoy watching sports, but mostly because I am all about the delicious food! There are so many delicious staples- from wings, to pigs in a blanket, to mac & cheese and my personal favorite, nachos. This year, in honor of the Baltimore Ravens, I have teamed up with Wild Fork Foods to make a Baltimore-inspired nacho board made with Wild Fork Foods Alaskan King Crab and Snow Crab. To add to the theme, I’ve created a fun queso sauce that’s amped up with Old Bay Seasoning and a bright lime crema to balance it out. Whether you’re a sports fanatic or more of a game day snacker, these nachos are the perfect addition to your game day spread!

Ingredients

  • 1 bag tortilla chips

  • 1/2 cup salsa

  • 1 jalapeño, sliced into thin coins

  • 1/4 red onion, diced

  • 1/2 cup black beans

  • 1/2 cup roasted corn (frozen fire roasted corn is 🔥)

  • 1/2 bag Wild Fork Foods Alaskan King Crab or Snow Crab

Guacamole

  • 2 avocados

  • 1/4 red onion, diced

  • 1 lime, juiced

  • 2 drops Worcestershire

  • 4 drops hot sauce

  • Pinch kosher salt

Lime Crema

  • 1/4 cup sour cream

  • 1 lime, juiced

Old Bay Queso Sauce

  • 2 Tbsp butter

  • 2 Tbsp AP flour

  • 1 cup milk (or non-dairy alternative)

  • 8 oz American cheese

  • 1 tsp green hatch chilis (or more if you’d like to make it very spicy)

  • Old Bay Seasoning

Method

Guacamole

  1. Scoop avocado into a medium-sized bowl

  2. Smash the avocado with the back of a fork until it’s your preferred consistency

  3. Mix in the diced onion

  4. Add the lime juice, Worcestershire sauce, hot sauce, and kosher salt and stir until combined

Lime Crema

  1. Mix together the sour cream and the lime juice until it is incorporated

  2. Place in a squeeze bottle or small bowl

Old Bay Queso Sauce

  1. In a medium sauce pan, melt the butter

  2. Once the butter has melted, stir in the flour and cook over medium-high heat for 2 minutes, whisking to ensure it doesn’t stick/burn

  3. While whisking, slowly pour in 1 cup of milk

  4. When the milk is combined, add in 2 Tbsp of Old Bay Seasoning. Turn down to low and allow to simmer for another 1-2 minutes

  5. Add in American cheese and continue to stir until melted

  6. Once melted, add in 1 tsp (or more) of green hatch chilis and stir to combine

  7. Remove from the heat *note that the queso will solidify if you leave it to sit, so this should be the last step before assembling/serving!

Assembly

  1. Assemble the tortilla chips on a platter or large cutting board. Try to ensure the chips are spread out evenly!

  2. Sprinkle over the corn, black beans, chopped tomatoes, diced onions, and sliced jalapeños

  3. Dollop guacamole, salsa, and the Old Bay Queso all over the platter

  4. Drizzle sour cream

  5. Top with pieces of Wild Fork Foods Alaskan King Crab or Snow Crab (I used a combo!)

  6. Sprinkle over some Old Bay Seasoning and enjoy!
