Grain-Free Chocolate Chip Banana Bread

I absolutely love this recipe because it’s a “healthier” version of the OG- sans grains and gluten but still loaded with chocolate chips. This recipe is Passover friendly but has become a weekly staple in my. household.

Ingredients

  • 3 bananas mashed

  • 3 eggs

  • 2 Tbsp vanilla extract

  • 1/3 cup agave

  • 3 Tbsp olive oil

  • 1 1/2 cups almond flour

  • 3/4 tsp baking soda

  • 1/2 tsp kosher salt

  • 1/3 cup ground flax seeds

  • 1 Tbsp cinnamon

  • 1 cup chocolate chips (I prefer mini!)

Method

  1. Preheat oven to 375 ℉

  2. In a bowl, mash the bananas with a fork until pureed

  3. Add 3 eggs to the bowl and stir until combined

  4. Add in vanilla extract, olive oil, and agave and mix to combine

  5. In a separate bowl, combine the almond flour, baking soda, flax seeds and cinnamon

  6. Add the banana mixture to the almond flour mixture and stir until just combined

  7. Stir in 1/2 cup of the chocolate chips and stir until mixed throughout

  8. Line a loaf pan with parchment paper (trim paper to fit)

  9. Pour batter into loaf pan

  10. Gently sprinkle 1/2 cup of chocolate chips across the top of the loaf

  11. Bake in the oven for 45 minutes

  12. Remove from oven and allow to cool- then ENJOY!
