Grain-Free Chocolate Chip Banana Bread
I absolutely love this recipe because it’s a “healthier” version of the OG- sans grains and gluten but still loaded with chocolate chips. This recipe is Passover friendly but has become a weekly staple in my. household.
Ingredients
3 bananas mashed
3 eggs
2 Tbsp vanilla extract
1/3 cup agave
3 Tbsp olive oil
1 1/2 cups almond flour
3/4 tsp baking soda
1/2 tsp kosher salt
1/3 cup ground flax seeds
1 Tbsp cinnamon
1 cup chocolate chips (I prefer mini!)
Method
Preheat oven to 375 ℉
In a bowl, mash the bananas with a fork until pureed
Add 3 eggs to the bowl and stir until combined
Add in vanilla extract, olive oil, and agave and mix to combine
In a separate bowl, combine the almond flour, baking soda, flax seeds and cinnamon
Add the banana mixture to the almond flour mixture and stir until just combined
Stir in 1/2 cup of the chocolate chips and stir until mixed throughout
Line a loaf pan with parchment paper (trim paper to fit)
Pour batter into loaf pan
Gently sprinkle 1/2 cup of chocolate chips across the top of the loaf
Bake in the oven for 45 minutes
Remove from oven and allow to cool- then ENJOY!
